Texas Better Beef – Grilled Wagyu Beef with Quick Creamed Spinach on the Food Network

This is an easy recipe for grilling your wagyu beef. You first marinade your wagyu beef for about 30 minutes in a garlic and rosemary marinade. Once the grill is ready you only need to grill your wagyu beef for 4-6 minutes. The creamed spinach is a perfect compliment to the rosemary and garlic flavor of the wagyu beef.


Ingredients

Steak:

  • 1/3 cup olive oil, plus more for greasing grill
  • 3 cloves garlic, minced
  • 3 tablespoons chopped fresh rosemary leaves
  • Kosher salt and freshly ground black pepper
  • 2 pounds wagyu beef (flank steak can be substituted)

Quick Creamed Spinach:

  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 2 bunches fresh spinach, thoroughly washed and chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan
  • 1/2 teaspoon ground nutmeg
  • Kosher salt and freshly ground black pepper

Pink Slime- Not Good Enough For Fast Food But It is Ok For Our Kids?

As adults it is our job to protect our children and teach them how to make good decisions. With recent headlines talking about how beef with pink slime is no longer used by fast food chains but it is being served to our children by way of school lunches we need to step back and remember our job as adults. Do we want our children eating this beef with pink slime? I would think many parents would say NO!

Beef with pink slime is a chemically processed food it does not have close to the normal amount of nutrients of normal beef. Some may say that everything is ok in moderation or on a short term basis, however when you think about how many years our kids are in school and eating school lunches that doesn’t really seem that short of a time.   Enough parents feel they do not want their children eating beef with pink slime as there is now a petition going around to get the additive out of school lunches.

Ever wondered what is in your beef? Jim Avila of ABC World News was the reporter on this story and he was tipped off by a whistleblower at the USDA.  He reported that pink slime was found in 70% of supermarket ground beef. Pink slime in beef doesn’t sound appetizing or healthy. What is pink slime in beef? It is the product of a method for salvaging meat scraps from otherwise unusable parts of a cattle carcass and is known as an ammonia-treated sludge. 

Back in 2009 the New York Times did a report on pink slime in beef stating that “a majority” of ground beef contained the substance, which is consistent with this new report. Since the last report came out fast food companies have stopped using pink slime in beef however it is still in the ground beef that schools use in their lunches.

Why is this pink slime in beef? At Texas Better Beef we recently wrote how Beef Prices Are On The Rise that has taken place in recent months and years. With these price increase consumers have shifted away from buying more expensive steaks and they now eat more hamburgers and meatloaves. What is a Wagyu?

What is a Wagyu?

Here at Texas Better Beef we raise Wagyu. Wagyu refers to Japanese beef cattle. The “Wa” stands for Japanese or Japanese style and the “gyu” means cattle. Initially these cattle were influenced by British and Continental breeds and crossbreeding was seen for several years. After this period specific traits were desired and were achieved by region and extensive line breeding.

There are two main breeds of Wagyu, the dominant black Wagyu and the red Wagyu. Tottori, Tajima, Shimane and Okayama are strains of the black Wagyu. You have two strains of the Red Wagyu, Kochi and Kumamoto.

Two Tottori Black Wagyu and two Kumamoto Red Wagyu bulls were imported into the U.S. back in 1976. It wasn’t until 1993 when two male and three female Tajima cattle were imported and then in 1994, 35 male and female red and black cattle reached the U.S.

Meat from Wagyu cattle are known for the marbling characteristics and increased eating quality from a naturally enhanced flavor, tenderness and juiciness. Their beef contains a higher percentage of omega-3 and omega-6 fatty acids than typical beef and the increased marbling improves the ratio of monounsaturated fats to saturated fats.

Wagyu cattle are said to produce the finest beef in the world!
